Origin:
Honey 100% from Spain. Mediterranean mountains are covered with cork, holm oak and oak trees and in the clearings by scrubland, broom, heather and labiates such as rosemary and thyme.
Characteristics:
Amber to dark amber in colour. A floral aroma dominates with some fruity, malty or earthy notes. Its sweet flavor is tempered by some salty notes.
Uses and Combinations:
Traditionally consumed as a diuretic. Like all dark honeys it combines well with meats in moderate quantity and added towards the end of the cooking period. Also combines well with nuts.
